Thai Green Papaya Salad 泰式青木瓜沙律
這款很受歡迎的泰式青木瓜沙律,在泰國是叫 som tam, 味道香濃,極其開胃。青木瓜是生的木瓜,內部應該是白色或淺綠色的,不能用熟的木瓜代替,因爲只會變木瓜蓉。

材料:
青木瓜 (中型) x 1/2個(去皮切絲)
青瓜 (長) x 1個(刮皮切絲)
紅蘿蔔 x 1個(去皮切絲)
車厘茄 x 4個(1開4)
芫茜 x 2束(切碎)
香茅 x 1條(1開4 再撕開, 要用少許油爆香)
檸檬葉 x 6片 (要用少許油爆香)
醬汁:
魚露 x 2湯匙
青檸汁 x 3個
橄欖油 x 2湯匙
綿糖 x 3茶匙
薄荷葉 x 3束(切碎葉)
辣椒 x 4條(切粒)
配料:
無鹽花生x 1/2 柸(烤香打碎)
做法:
1. 將所有切好的沙律材料放進沙律碗內。
2. 把醬汁材料用另外一個碗混合好,再加入沙律裏拌勻。
3. 放上配料,食用前把所有材料再混合一次。
This salad, known as som tam, is strongly fragranced and extremely appetising. The green papaya (under-ripe, inside should be white or light green) cannot be replaced by a ripe papaya as it will simply turn to mush.

Ingredients:
Green papaya (medium size) x 1/2pc (peeled & sliced)
Cucumber (long) x 1pc (peeled & sliced)
Carrot x 1pc (peeled & sliced)
Cherry tomatoes x 4pcs (cut in 4)
Coriander x 2bunches (finely chopped)
Lemon grass x 1pc (cut in 4 long pieces, break them)
Lime leaves x 6pcs
Dressings:
Fish sauce x 2tbsp
Lime juice x 3limes
Olive oils x 2tbsp
Caster sugar x 3tsp
Mint leaves x 3stalks (finely chopped, only use leaves)
Chilli x 4pcs (chopped)
Topping:
Unsalted peanuts x 1/2cup (toasted and crunched)
Directions:
1. Prepare all the ingredients and place them in a salad bowl.
2. Mix the dressings in a separate bowl then mix in to the salad.
3. Place the toppings. Mix well before serving.
