墨西哥卡津炸雞的材料:

雞鎚 x 8件(少許海鹽,雞粉和卡津粉醃過夜)
炸粉 x 1包(80克)
鷹粟粉 x 80克
蛋 x 1(發打)
卡津粉 x 3湯匙
紅椒粉 x 1湯匙
辣椒粉 x 1湯匙
五香粉 x 2湯匙
番茜 x 1湯匙
黑胡椒 x 1湯匙

牛油果醬的材料:

牛油果 x 1隻(用义子壓爛)
芒果 x 1/2隻(切小粒)
車利茄 x 2粒(切小粒)
芫茜 x 1束 (切碎)
蒜頭 x l粒 (切碎)
紅葱頭 x 1/2粒 (切碎)
茄汁 x 2湯匙
檸檬皮 x 1隻檸檬
檸檬汁 x 1/2 隻檸檬
海鹽 x 少許
黑胡椒 x 少許

墨西哥卡津炸雞的做法:

1. 把同等份量的炸粉和鷹粟粉混合在一個碗中。雞鎚上蛋和上粉。
2. 把雞鎚炸至金黃色。隔乾油份備用。
3 .轉移到一個大碗裡。把炸雞灑上卡津粉,紅椒粉,紅辣椒粉,五香粉,番茜和黑胡椒粉。

牛油果醬的做法:

1.將所有材料混合在一起。根據自己的喜好調整味道。如果你喜歡辛辣,可加入新鮮辣椒。

Ingredients for Mexican Fried Cajun Chicken:

Chicken drum sticks x 8pcs (Marinate with sea salt, chicken stock & Cajun powder overnight)
Frying powder x 1pack (80g)
Corn starch x 80g
Egg x 1 (beat)
Cajun powder x 3tbs
Red chilli powder x 1tbsp
Paprika powder x 1tbsp
Five Spice powder x2tbsp
Parsley x 1tbsp
Black pepper x 1tbsp

Ingredients for Guacamole Sauce:

Avocado x 1pc (smashed)
Mango x 1/2pc (small dices)
Cherry tomato x 2pcs (small dices)
Coriander x 1stalk (finely chopped)
Garlic x cloves (minced)
Shallot x 1/2pc (finely chopped)
Ketchup x 2tbsp
Lemon zest x 1lemon
Lemon juice x 1/2lemon
Sea salt x 1pinch
Black pepper x 1pinch

Direction for Mexican Fried Cajun Chicken:

1. Mix the frying powder and corn starch in a bowl. Coat the chickens with egg and the powder mixture.
2. Deep fry the chickens until golden. Set it aside in a drainer.
3. Transfer to a big bowl. Sprinkle and coat the chickens with Cajun power, red chilli powder, paprika powder, Five spice powder, parsley and black pepper.

Direction for Guacamole Sauce:

1. Mix all the ingredients together. Season and adjust the taste to your own liking. Add fresh chilli if you like it spicy.
