Strawberry Sponge Cake 士多啤梨海綿蛋糕

蛋 x6隻
綿糖 x120克
雲哩拿精油 x2茶匙
低筋粉 ×180克

牛奶 x80克

鮮奶油 x500毫升
士多啤梨果醬 x3湯匙
紅色食用色素 x1微滴
士多啤梨 x9粒 (切成小粒)+ 7粒 (裝飾)
做法:
1.將焗爐預熱至180℃。
2.在一個大碗裡用攪拌器打蛋約2-3分鐘,加入綿糖並打至軟頂。
3.加入雲哩拿精油,輕輕篩入蛋糕粉。
4.將融了的牛油與牛奶混合,加入一殼麵糊,拌勻,再放回大麵糊中,並輕輕混合。
5.將麵糊分別放入兩個6"的模,焗30分鐘(經常檢查,因為所有焗爐在某種程度上都是不同的,頂部一變成金黃色,便用錫紙蓋上並調低到160c)
6.用攪拌器打鮮奶油直到軟頂。留著少許白色鮮奶油(約1/5)作裝飾。
7.加入士多啤梨醬和一小滴紅色食用色素(使用牙籤)。
8.用牙籤檢查蛋糕,看看是否熟透。放在架上冷卻。 (或者放入雪櫃)
9.蛋糕切成3層。 (只使用頂層2層,丟棄底層)
10.做蛋糕底層,將粉紅色的鮮奶油塗在海綿蛋糕上,在頂部加入一些士多啤梨粒。重複第二層和第三層。
11.做最後一層,只需將鮮奶油塗在上面,然後慢慢把整個蛋糕批到看起來更光滑。
12.放7粒士多啤梨於頂部,加上一些白色鮮奶油作裝飾。

Egg x 6pcs
Caster sugar x 120g
Vanilla essence x 2tsp
Cake flour x 180g

Unsalted butter x 50g (melted)
Milk x 80g

Whipped cream x 500ml
Strawberry jam x 3tbsp
Red food colouring x 1 tiny drop
Strawberry x 9pcs (cut into small dices) + 7pcs (toppings)
Directions:
1. Preheat the oven to 180c.
2. Beat the eggs with a hand mixer for about 2-3 mins in a large bowl, add in caster sugar and beat until soft peak.
3. Add in vanilla essence. Sift in cake flour gently.
4. Mix the melted butter with milk. Add in a scope of batter, mix well. Add this small mixture back to the batter and gently mix it well.
5. Separate the batter into two 6" forms. Bake it for 30mins. (Should check it often as all ovens are somehow different, once it gets golden on top, then cover it with aluminium foil and turn down to 160c)
6. Whip the whipped cream with a hand mixer until soft peak. Reserve some white whipped cream (1/5) for decoration before mixing it into pink colour.
7. Add in strawberry jam and a little tiny drop of red food colouring (use toothpick).
8. Check the cake with a toothpick and see if it's done. Cool it on a metal rack. (or in the fridge for faster action)
9. Cut into 3 layers on each cake. (only use the top 2 layers, discard the bottom layers)
10. To create the bottom layer, spread the pink whipped cream on the sponge cake, add in some diced strawberry on top. Repeat for the 2nd and 3rd layers.
11. For the last layer, just spread the whipped cream on top. Make the whole cake a bit more smooth looking.
12. Decorate with 7 whole strawberries on top, some white whipped cream and decorate as you like.
