Haemul Pajeon, Korean Seafood & Spring Onion Pancake 韓國海鮮煎餅
的確很喜歡韓國料理,韓國烤肉、韓國燒烤、泡菜和這個Haemul Pajeon 韓國海鮮煎餅,你吃過嗎?
這個食譜中我用了虎蝦和魷魚,你亦可以隨意使用其他海鮮!市面上有很多韓國即用煎餅粉,你甚至可用天婦羅炸粉來代替 (有些人覺得還更香脆),十分方便,但自製粉漿其實一點也不難!只需15到20分鐘輕鬆完成,煎好後配上辣芝麻醬和自家製泡菜,口感一流! 快些試著製作給朋友們吃啦!包保他們會愛死你喔!

粉漿:
麵粉 x 半杯
豆醬 x 1茶匙
糖 x 半茶匙
凍水 x 半杯
海鹽 x 少許
材料:
虎蝦 x 3隻(洗淨,平切成兩邊)
魷魚 x 1隻(洗淨,切成小塊)
蔥 x 2束(切成約 10厘米長)
紅色長辣椒 x 1/2條(切小片)
蛋 x 1隻(輕發)
醬料:
生抽 x 2湯匙
白醋 x 2湯匙
糖 x 1茶匙
洋蔥 x 2湯匙(切碎)
辣椒片 x 1湯匙
芝麻 x 1湯匙
麻油 x 1湯匙
做法:
1. 將所有粉漿材料混合在一個拌碗中,直到質地光滑。
2. 在煎鍋中加入一些油,平均地放入蔥。
3. 倒入3/4的粉漿,把蔥覆蓋。
4. 均勻放置海鮮,轉為中低火。
5. 在上面撒上一些紅色長辣椒。
6. 倒入其餘的粉漿,煮約5-6分鐘。
7. 將雞蛋倒在煎餅的頂部,再煮1-2分鐘。
8. 查看底部是否金黃鬆脆,翻轉煎餅再煮幾分鐘直到另一面也是金黃酥脆的。
9. 在上面撒上一些切碎的蔥和紅辣椒作裝飾。
10. 配辣芝麻醬(混合所有醬汁材料便可)。

I really love Korean food, Bogogi, Korean Barbecue, Kimchi and this Haemul Pajeon which is seafood and spring onion pancake! Have you tried that before?
No worry about the seafood. You can use any seafood as you like. In this recipe I've used tiger prawns and calamari! Why not add in mini oysters if you like! If you want to be lazy and fast, you can buy those Korean pancake mix or even Tempura mix but I will teach you how to make the batter from scratch! It's very yummy to eat it with a spicy sesame sauce (available in this recipe) and also some homemade kimchi.
This recipe is so easy to make and it will take you only 15 to 20 minutes! Try to impress your friends with this! They will love you! So good luck in the kitchen and have fun!

Batter Ingredients:
All-purpose flour x 1/2cup
Soybean paste x 1tsp
Sugar x 1/2tsp
Cold water x 1/2cup
Sea salt x 1pinch
Toppings Ingredients:
Tiger prawns x 3pcs (washed, cut into half)
Calamari x 1pc (washed, cut into small pieces)
Spring onion x 2stalks (cut into 10cm long)
Red long chilli x 1/2pcs (small slices)
Egg x 1pc (lightly beaten)
Sauce Ingredients:
Soy sauce x 2tbsp
White vinegar x 2tbsp
Sugar x 1tsp
Onion x 2tbsp (finely chopped)
Chilli flake x 1tbsp
Sesame seeds x 1tbsp
Sesame oil x 1tbsp
Directions:
1. Combine all the batter ingredients in a mixing bowl until you get a smooth texture.
2. Add some oil into the frying pan. Place spring onions and spread evenly.
3. Pour 3/4 of batter covering the spring onions.
4. Place seafood evenly and turn to medium to low heat.
5. Sprinkle some red long chilli on top.
6. Pour the rest of the batter and cook for about 5-6 minutes.
7. Pour egg on the top of the pancake and cook for another 1-2 minutes.
8. While the bottom is golden and crispy, carefully flip over the pancake and cook for another few minutes until the other side is also golden and crispy.
9. Sprinkle some chopped spring onions and red chilli on top for garnishing.
10. Serve with the spicy sesame sauce (mix all the sauce ingredients).
