Japanese Juicy Beef Burger 日本飛騨牛漢堡包




若你想在家自製一個美味多汁又彈牙的漢堡包,那你一定要試這個日本飛騨牛漢堡!可以在很多凍肉店買到,價錢大約$50 一包,有兩塊。

材料:

日本飛騨牛漢堡 x 2塊 (不用醃製)
煙肉 x 2塊 (切一半)
沙律菜 x 4塊 (洗淨)
車打芝士 (年齡越大越好) x 2塊 
蕃茄 x 1/2個  (切薄片)
白蘑菇 x 5粒 (切薄片)
蒜頭 x 2粒 (磨蓉)
紅洋蔥 x 1/2個 (切薄片)
Dijon 芥辣 x 1茶匙
Ciabatta 意大利包 x 1個 (開半) (A1 / Das Gute買到)
葡萄籽油 x 2湯匙
牛油 x 10克
白酒 x 1湯匙
海鹽 x 1/2茶匙
黑胡椒粉 x 1/2茶匙
乾番茜 x 1茶匙

做法:

1. 把煙肉煎脆,再放到廚房紙上待用。
2. 用同一個煎鑊,用之前煎煙肉剩下的油來煎飛騨牛漢堡,每邊煎大約3分鐘,煎多久可根據自己食牛扒的喜好。你可以用刀切開中間少少來觀察。
3. 同時,用另一個煎鑊,加上少少葡萄籽油,把白蘑菇炒熟,再加上牛油、白酒、海鹽、黑胡椒粉和乾番茜,把它放到碟上備用。
4. 用同一個煎鍋,炒香紅洋蔥,如有需要可加多少少油。
5. 把番茄煎大約1分鐘。
6. 把意大利包放到之前煎漢堡的那個煎鑊上,每邊煎大約1分鐘。
7. 現在你可製作漢堡包。首先把意大利包的底部放在底層,加上兩塊沙律菜,把漢堡塗上芥辣,再放上沙律上,之後放上車打芝士、番茄、紅洋蔥和蘑菇,然後放上煙肉,再放上另外一邊的意大利包於頂部,完成。

Ingredients:

Japanese Burger Meats x 2pcs (no need to marinate)
Bacon x 2pcs (cut into half)
Green Salad x 4pcs (washed)
Aged Cheddar x 2pcs
Big Tomatoes x 1/2pc (thin sliced)
White Mushroom x 5pcs (thin sliced)
Garlic x 2cloves (minced)
Red Onion x 1/3pc (thin sliced)
Dijon Mustard x 1tsp
Ciabatta Bread x 1pc (cut into half)
Grape Seed Oil x 2tbp
Butter x 10g
White Wine x 1tbsp
Sea Salt x 1/2tsp
Black Pepper x 1/2tsp
Dried Parsley x 1tsp

Directions:

1. Pan-fry the bacon until crispy. Remove and place them on a kitchen paper to suck up the oil.
2. Use the same frying pan and heat up the oil from the bacon. Pan-fry the Japanese burger meats for about 3 minutes on each side. Cook according to how you want the beef to be. You can cut open the middle a little bit and check.
3. In the meantime, heat up another frying pan with grape seed oil. Fry the white mushrooms with the garlic. Add the butter, white wine, sea salt, black pepper and dried parsley. Remove mushrooms from the pan.
4. Use the same pan to fry the red onion. You can add some more oil if needed. 
5. Then fry the sliced tomatoes for about 1 minute.
6. Now fry the ciabatta bread on the pan that you're using for the burger, cut side down, for about 1 minute. Turn it up side down and fry for another minute. 
7. Now assemble your burger. Place the bottom of the ciabatta bread, then add 2 pieces of salad, spread some dijon mustard on the burger meat, place it on the salad, add the aged cheddar on top of the burger meat, then add a slice of tomato, red onion and mushrooms, place 2 pieces of bacon on top, then finally place the top part of the ciabatta.
