Mini Cupcakes 迷你紙杯蛋糕

紙杯蛋糕
材料:

牛油 x 85克 (溶至軟身,切粒)
綿糖 x 85克
大雞蛋 x 1隻 
士多啤梨果醬 x 1小樽 (約42克)
全脂奶 x 75毫升
自發粉 x 125克 (已篩)
梳打粉 x 1茶匙

紙杯蛋糕
做法:

1. 把焗爐預熱至180度。
2. 用一個大而深的容器,用電動攪拌器把牛油和糖粉發打一起。
3. 加入雞蛋,繼續發打一起。
4. 慢慢加入牛奶、自發粉和梳打粉。
5. 再加入士多啤梨果醬,繼續發打一起。
6. 把大約一湯匙的蛋糕漿放於可放置焗爐的紙杯蛋糕杯子內,焗大約13至15分鐘。
7. 用牙籤吉入紙杯蛋糕中間來查看是否已焗完。
8. 待涼。

芝士忌廉
材料:

忌廉芝士x 150克 (凍身,切粒)
牛油 x 70克 (溶至軟身,切粒)
雲呢拿香草精 x 1茶匙
糖粉 x 100克 (已篩)

芝士忌廉
做法:

1. 把芝士忌廉和牛油發打一起。
2. 加入雲呢拿香草精和糖粉,再發打至滑但頗厚身。
3. 用啫花袋把芝士忌廉唧在迷你紙杯蛋糕上,再加上自己喜愛的裝飾配料。

CUPCAKES 
Ingredients:

Butter x 85g (softened)
Caster Sugar x 85g
Large Egg x 1pc
Strawberry Jam x 1 mini jar (approx. 42g)
Full Fat Milk x 75ml
Self Raising Flour x 125g (sifted)
Baking Power x 1tsp

CUPCAKES
Directions:

1. Preheat the oven to 180c. 
2. Use a big and deep bowl and beat the butter and caster sugar together with a electric whisk (handheld mixer).
3. Add the egg and continue to beat until completely incorporated.
4. Slowly pour in the milk, then the self raising flour and baking power.
5. Add in the strawberry jam and continue to whisk until smooth. 
6. Fill each oven-proof cupcake case with 1tbsp of the mixture and bake for about 13-15mins. 
7. Check with a toothpick by inserting into a cupcake centre and see if it comes out clean. 
8. Allow to cool down before icing.

ICING
Ingredients:

Cream Cheese x 150g (chilled)
Butter x 70g (softened)
Vanilla Extract x 1tsp
Icing Sugar x 100g (sifted)

ICING
Directions:

1. Beat together the cream cheese and butter in a deep bowl until well combined.
2. Add the vanilla extract and icing sugar and beat until the icing is smooth and thick.
3. Pipe the icing onto the mini cupcakes using a piping bag. Decorate with your choice of toppings.
