Creamy Chicken, Mushroom & Spinach Puff Pastry 忌廉蘑菇雞肉菠菜酥餅


一提起酥皮,很多人便會想到酥皮海鮮湯,其實酥皮還有很多吃法!早餐可以整牛角包,午餐可以整酥皮薄餅,甜品可以試下芒果酥皮脆脆。

而我今次介紹這個忌廉蘑菇雞肉菠菜酥餅,也是很簡單容易製作的,配合一少份沙律,作為午餐或晚餐也很美味的!

份量:4人
時間:45分鐘

材料:

雞柳 x 4小條 (用橄欖油、羅勒、檸檬汁、海鹽和黑胡椒粉醃,切成小粒)
燒烤菇 x 2隻 (切小粒)
菠菜 x 1束 (洗凈,略切)
蒜頭 x 6粒 (切碎)
紅蔥頭 x 4粒 (切小片)
煮食忌廉 x 1小盒
白酒 x 1/2 小支
Mozzarella 芝士 x 2杯
帕爾馬芝士 x 1杯
酥皮 x 4塊
蛋黃 x 1隻
番茜 x 1湯匙
海鹽 x 1/2茶匙
黑胡椒粉 x 1/2茶匙

做法:

1. 把焗爐預熱至180度。
2. 爆香蒜頭和紅蔥頭,和雞肉一起煮。
3. 加入燒烤菇和菠菜,煮熟。
4. 再加入忌廉、白酒、番茜、海鹽、黑胡椒粉和帕爾馬芝士。
5. 慢煮大約15分鐘。
6. 用粟粉加水,加入醬汁裏,令它變濃。
7. 稍待涼。
8. 放一塊酥皮於牛油紙上。
9. 幻想把正方形的酥皮分成三份長方形。把醬汁放在中間的長方形,加入Mozzarella 芝士。
10. 把下面的長方形摺上,再把上面的長方形摺下。
11. 用义把兩面收口,在於酥皮面拮洞。
12. 掃上蛋黃。
13. 製作其餘三份。
14. 放入焗爐焗12至15分鐘,直至變金黃色。


There are definitely many delicious recipes for any occasion by using puff pastry. For breakfast, you can make croissants, egg & chorizo tarts, bacon, egg & cheese pastry shells, etc. For lunch & dinner, you can make puff pizza, puff pastry chicken sandwich. For desserts, you can make mango napoleons, caramelised plum tart, etc.

This creamy chicken, mushroom & spinach puff pastry I'm making is very simple too. It's perfect to eat with a simple green salad.

Ingredients:

Chicken x 4 small fillets (marinated by olive oil, rosemary, lemon juice, sea salt & black pepper, chopped in small dices)
Portobello Mushroom x 2pcs (chopped in small dices)
Spinach x 1 bunch (washed, slightly chopped)
Garlic x 6 cloves (chopped in small dices)
Shallots x 4pcs (sliced)
Cooking Cream x 1 small box
White Wine x 1/2 small bottle
Mozzarella Cheese x 2cups
Parmesan Cheese x 1cup
Puff Pastry x 4pcs
Egg yolk x 1pc (for brushing)
Parsley x 1tbsp
Sea Salt x 1/2tsp
Black Pepper x 1/2tsp

Directions:

1. Preheat the oven to 180c.
2. Fry the garlics and shallots with chicken in a frying pan.
3. Add in the mushrooms and spinach and fry until cooked.
4. Add in cream, white wine, parsley sea salt and black pepper and parmesan.
5. Slow cook the sauce for about 15 minutes.
6. Add in some corn starched mixed in water to thicken the sauce.
7. Let the sauce cooled down a little bit.
8. Place once puff pastry sheet on a baking sheet.
9. Imagine you separate the square-shaped puff pastry into 3 rectangles. Put the sauce in the middle rectangle. Add some mozzarella into the sauce.
10. Fold the bottom rectangle onto the sauce. Then fold the top rectangle onto the bottom rectangle.
11. Use a fork to close the edges and make some small holes on the top of the puff pastry.
12. Brush some egg yolk on top.
13. Make other 3 puff pastry.
14. Bake in the oven for about 12-15 minutes.
