Italian Spicy Sausage Spaghetti 意大利辣肉腸意粉
"Al dente" 是意大利文,中文解作意粉的硬度剛剛好,不太軟也不大硬!煮意粉一定要是 al dente 才好吃的喔!

材料:
蒜頭 x 6粒 (切細粒)
紅葱頭 x 3粒 (切薄片)
意大利辣肉腸 x 3條 (切片)
蕃茄 x 6隻 (切粒)
車厘茄 x 6隻 (切粒)
紅蘿蔔 x 1條 (切細粒)
海鹽 x 1/2茶匙
黑胡椒粉 x 2茶匙
牛至 x 2茶匙
百里香 x 2茶匙
茄膏 x 3茶匙
牛 / 雞粉 x 3茶匙
熱水 x 2碗

意粉 x 1/2包 (250克)
海鹽 x 1茶匙
橄欖油 x 2湯匙
帕爾瑪芝士 x 50克 (磨碎)
羅勒 x 8片 (4對)
做法:
1. 把蒜蓉和紅蔥頭炒香。
2. 加入意大利辣肉腸炒5分鐘。
3. 再加入番茄和紅蘿蔔炒多5分鐘。
4. 加入海鹽、黑胡椒粉、牛至、百里香、茄膏、牛或雞粉,加兩碗熱水用大火煮大約15分鐘。
5. 然後轉慢火炆大約15分鐘。可用粟粉加水令汁變濃。
6. 同時,在開水中加入橄欖油和海鹽,把意粉煮大約10-12分鐘。
7. 將煮熟的意粉加入辣肉腸醬中炒一回兒,或者將醬汁直接放在意粉上。
8. 灑上帕爾瑪芝士和放一對羅勒葉作裝飾。
"Al dente" is an Italian term which describes the pasta that is cooked to be firm to the bite. The etymology is "to the tooth" in Italian. Thus, "al dente" is to identify the ideal consistency for pasta, that is not too hard nor too soft.

Ingredients:
Garlic x 6pcs (finely chopped)
Shallots x 3pcs (sliced)
Italian spicy sausages x 3-4pcs (sliced)
*You may also use chorizo
Tomatoes x 6pcs (diced)
Cherry tomatoes x 6pcs (diced)
Carrot x 1pc (Cut into small dices)
Sea Salt x 1/2tsp
Black Pepper x 2tsp
Oregano x 2tsp
Thyme x 2tsp
Tomato Paste x 3tsp
Beef Stock / Chicken Powder x 3tsp
Hot Water x 2 bowls

Spaghetti x 1/2pack (250g)
Sea salt x 1tsp
Olive Oil x 2tbsp
Parmesan x 50g (grated)
Sweet basil x 8leaves (4pairs)
Directions:
1. Fry the garlic and shallot in grape seed oil.
2. Add in spicy sausages and fry for about 5 minutes.
3. Add in tomatoes and carrots and fry for another 5 minutes.
4. Sprinkle in sea salt, black pepper, oregano, thyme, tomato paste and beef stock or chicken power. Add 2 bowls of hot water and let it cook for at least 15 minutes in high heat.
5. Then turn down to low heat, let it simmer for another 15 minutes. Add some cornstarch with water to thicken the sauce.
6. In the meantime, add in olive oil and sea salt in boiling water, cook the spaghetti for 10-12 minutes until al dente.
7. You can add in the cooked spaghetti into the spicy sausage sauce and fry for a while, or you can simply place the sauce on top of the pasta.
8. Sprinkle parmesan on top and decorated with basil leaves.
