Carbonara 卡邦尼意粉

材料:

蝴蝶粉 x 1/2包 (250克)或其他意大利粉
煙肉 x 1包 (8片)
蒜頭 x 4粒 (切碎)
蘑菇 x 100克 (切片)
蛋黃 x 3隻
忌廉 x 200毫升
巴爾瑪芝士 x 100克(磨碎)

做法:

1. 煮熟Farfella,瀝乾並放在一邊。
2. 將煙肉煎至香脆(不需加油)。放在廚房用紙上待涼,切成小塊並放在一邊。
3. 在同一個平底鍋上用煎完煙肉後的油炒香蒜頭和蘑菇。
4. 將蛋黃,忌廉和巴爾瑪芝士放入碗中拌勻,放在一邊。
5. 現在將煮熟的Farfella加入鍋中,加入蛋黃,忌廉和巴爾瑪芝士的混合物。煮稠。
6. 灑上煙肉 。建議添加一些黑胡椒和墨角蘭,以其有更濃郁的味道。

Ingredients:

Farfelle x 1/2pack (250g) or other type of pasta
Bacon x 1pack (8 slices)
Garlic x 4cloves (finely chopped)
Button mushrooms x 100g (sliced)
Egg yolks x 3pcs
Cooking cream x 200ml
Parmesan x 100g (grated)

Directions:

1. Boil the Farfella, drain and set aside.
2. Fry the bacon until crispy (you don't need any oil in the pan). Let it cool on a kitchen paper, cut into small pieces and set aside.
3. Fry the garlic and button mushrooms with the leftover oils from frying bacon on the same pan.
4. Mix egg yolks, cooking cream and parmesan in a bowl, set aside.
5. Now add in the cooked Farfella into the pan, add in the mixture of egg yolks, cooking cream and parmesan. Fry until cream becomes thicken.
6. Sprinkle bacon on top. Suggest to add some black pepper and marjoram to create more intensive taste.
