Grilled Spring Chicken 燒春雞



燒春雞的秘訣是用橄欖油,檸檬汁,大量蒜頭,迷迭香,海鹽和黑胡椒醃製整個晚上!嘗試一下這個食譜,一試便知分別呢!

春雞 x 1隻
橄欖油 x 1/2杯
檸檬汁 x 1隻檸檬
蒜頭 x 1個(磨泥)
迷迭香 x 1束(切碎)
海鹽 x 1茶匙
黑胡椒 x 1茶匙

馬鈴薯 x 1-2隻(切粒)
紅蘿蔔 x 1隻(切粒)
洋蔥 x 1/2隻(切大粒)
蒜頭 x 8粒(開半)
牛油 x 30克(切粒)

迷迭香 x 1束(切碎)
檸檬 x 2片

做法:

1. 用橄欖油,檸檬汁,大量蒜頭,迷迭香,海鹽和黑胡椒醃製整個晚上。按摩數分鐘,把它放入雪櫃。

2. 焗龍預熱至240c。把握雞放入烤盤,把切好的馬鈴薯,紅蘿蔔,洋蔥和蒜頭放在雞周圍。

3. 倒入醃製汁液。加入牛油和蒜頭焗30分鐘。反轉再焗15分鐘。再反轉焗多5-10分鐘至兩邊都是金黃香跪的。

4. 用迷迭香和檸檬伴碟,上碟即食。

My secret to make the grilled spring chicken is to marinate it the night before with olive oil, plenty of garlic, lemon juice, rosemary, sea salt and black pepper! Try it! You will know the difference!

Ingredients:

Spring chicken x 1pc
Olive oil x 1/2cup
Lemon juice x 1lemon
Garlic x 1whole (minced into paste)
Rosemary x 1stalk (finely chopped)
Sea salt x 1tsp
Black pepper x 1tsp

Potato x 1-2pcs (diced)
Carrot x 1pc (diced)
Onion x 1/2pc (big dices)
Garlic x 8cloves (cut in half)
Butter x 30g (diced)
*******************************
Rosemary x 1stalk (slightly chopped)
Lemon x 2slices

Directions:

1. Marinate the chicken with olive oil, lemon juice, garlic, rosemary, sea salt and black pepper overnight. Massage it for a few minutes before you leave it in the fridge.

2. Preheat the oven to 240c. Place the chicken in a baking form and put the diced potato, carrot and onion and garlic around the chicken.

3. Pour in the juice from marinating. Add in the diced butter. Bake for 30 minutes. Turn it and bake for another 15 minutes. Turn it again and bake for 5-10 minutes or until both sides golden and crispy.

4. Garnish with rosemary and lemon! Serve immediately.
