Seafood Paella

Ingredients:

Garlic x 6cloves (finely chopped)
Onion x 1/2pc (finely chopped)
Red paprika x 1/2pc (diced)
Squid x 1pc (washed, sliced)
Tiger prawns x 8pcs (washed, cut away legs)
Blue mussels x 8pcs
Cherry tomato x 4pcs (cut into 4)
Tomato paste x 1/2can
Paprika powder x 1tbsp
Saffron x 1tbsp
Fish / chicken broth x 1pack
Sea salt x 1pinch
Black pepper x 1pinch
Fallera rice / Round rice x 2 cups
Fresh basil x 5leaves (chopped)
Dried parsley x 1 pinch
Lemon juice x 1tbsp
Lemon zest x 1pinch
Lemon wedges x 1lemon (cut into 6pcs)

Directions:

1. Use an authentic paella pan or a cast iron pan to obtain a better result.
2. Add some rice-bran oil over a medium-high-heat pan.
3. Fry the squid until cooked. Set aside.
4. Add garlic and onion and fry until golden.
5. Add cherry tomato, tomato paste, paprika powder saffron, chicken stock, sea salt and black pepper.
6. Add rice and bring to boil. Turn the fire to medium-low. Stir now and then.
7. Until the rice is almost done, place the tiger prawns, mussels and squids on top. Cover lid and cook for 10 mins until seafood are done.
8. Turn to medium-high heat and cook for 1.5 minutes to obtain "socarrat" (crunchy bottom).
9. Garnish with fresh basil, dried parsley, lemon juice, lemon zest and lemon wedges.
