Tiger Prawn Risotto in Lobster Sauce 意大利龍蝦汁大蝦軟飯


材料:

虎蝦 x 10隻
BB菠菜 x 1束
紅椒 x 1/3隻
蒜頭 x 5粒
紅蔥頭 x 4粒
檸檬汁 x 1/2隻檸檬
檸檬皮 x 1/2隻檸檬
帕爾馬芝士粉 x 50g
海鹽 x 1/2茶匙
黑胡椒粉 x 1/2茶匙
葡萄籽油 x 1/2茶匙
牛油 x 20克
龍蝦湯 x 1罐
意大利軟飯米 x 90克
熱水 x 1杯

做法:

1. 把虎蝦清洗乾淨去腸剝殼。用一湯匙橄欖油、一粒蒜蓉、少許海鹽和黑胡椒粉醃最少1小時。
2. 把其餘的蒜頭和紅蔥頭切碎,放在砂鍋裏用葡萄籽油爆香。
3. 加入BB菠菜、已切粒的紅椒,炒大約2分鐘。
4. 加入意大利軟飯米,和其他材料一起炒大約5分鐘。
5. 加入一杯熱水,繼續攪拌。
6. 加入龍蝦湯、帕爾馬芝士和牛油,繼續攪拌至熟透。如有需要,可加熱水。
7. 製作意大利軟飯期間,用少許的蒜蓉和紅蔥頭把虎蝦炒熟。
8. 把剛剛熟透的意大利軟飯放在碟上,再放虎蝦,然後擠少許檸檬汁和檸檬皮於頂部。

Ingredients:

Tiger Prawns x 10pcs
Baby Spinach x 1bunch
Red Paprika x 1/3pc
Garlic x 5cloves
Shallots x 4pcs
Lemon Juice x 1/2pc
Lemon Zest 1/2pc
Parmesan x 50g
Sea Salt x 1/2tsp
Black pepper x 1/2tsp
Grapeseed oil x 1tbsp
Butter x 20g
Lobster Bisque x 1can
Risotto Rice x 90g
Hot Water x 1cup

Directions:

1. Wash and peel the tiger prawns. Marinate with a tablespoon of olive oil, a clove of finely chopped garlic, sea salt and black pepper for at least 1 hour.
2. Finely chop the garlics and shallots, fry them in grape seed oil with in a casserole.
3. Add in baby spinach and the red paprika (chopped in small dices). Fry for 2 minutes.
4. Add in risotto. Fry for 5 minutes together with other ingredients in the casserole.
5. Add in a cup of water. Let it boiled and keep stirring.
6. Add in the lobster bisque, Parmesan cheese and butter. Keep stirring until the risotto is cooked and porridge like. Add more hot water if needed. 
7. In the meantime, fry the tiger prawns with garlic and shallots.
8. Place the risotto on a dish. Put the tiger prawns on top. Squeeze some lemon juice and sprinkle the zest of lemon on top.
