Tiramisu
作為一個 Tiramisu 愛好者,我當然嘗試過很多不同地方製作的 Tiramisu!
但這個正宗食譜是由一位意大利婆婆給我的, 冧酒和特濃咖啡的濃郁味道、Mascarpone 芝士的甜甜香味、和可可粉的少少苦澀味,混合一起簡直是一種完美享受!
快快一起學一學,製作這個十分美味而不太甜的 Tiramisu 給你的另一半啦!
材料:
大蛋黃 x 4隻
白砂糖 x 1/2杯
Mascarpone 芝士 x 500克
冧酒 x 5個蓋
手指餅 x 1包 (或大約20條)
特濃咖啡 x 500毫升
可可粉 (70%) x 2湯匙
士多啤梨 x 5粒
做法:
1. 沖一大碗特濃咖啡,待冷備用。最好是用咖啡機沖的,如果沒有咖啡粉也可以,但一定要黑咖啡。
2. 打蛋和糖一起發打。
3. 加入 Mascarpone 芝士,在一起發打至幼細軟滑,沒有粒狀的芝士忌廉混合物。
4. 慢慢加入冧酒,不可一次加太多因為會令混合物變稀。可自行加減份量而調校酒味的濃弱度。
5. 選擇一個喜愛的玻璃盤或者酒杯,在底部加上第一層芝士忌廉混合物。
6. 把手指餅滲入凍了的濃郁咖啡裏,大約數3秒便要拿起來。
7. 一條一條的平鋪於第一層芝士忌廉混合物上。
8. 第二層又是這樣方法製作。
9. 製作最後一層,而最頂一層一定是忌廉芝士混合物。
10. 篩上可可粉。
11. 放上士多啤梨作裝飾。
I'm such a tiramisu lover!
The intensity of rum and expresso, the sweetness & creaminess of the mascarpone, and the bitterness of the cocoa power are just sensational! I can admit that I've tried many tiramisu from different places. And this recipe I got from an Italian grandma can just beat the rest!

Ingredients:
Egg Yolks from Large Eggs x 4pcs
White Sugar x 1/2cup
Mascarpone Cheese x 500g
Rum x 5lids
Lady Fingers x 1pack or 20pcs
Espresso x 1bowl or 500ml
Cocoa Powder (70%) x 2tbsp
Strawberries x 5pcs
Directions:
1. Use a good quality of espresso. Let it cool down before using it.
2. Beat the egg yolks with the white sugar.
3. Add in Mascarpone cheese. Beat until it's smooth and creamy.
4. Add the rum to the cheese mixture little by little. Make sure it's not too much, otherwise it will be too lose. Taste according to your liking. Use less rum if you don't like too much alcohol taste.
5. Apply the first layer of this cheese mixture on the bottom of a transparent form or a wine glass.
6. Dip the lady finger one by one in the espresso. I could count 3 seconds each.
7. Place them flat on top of the first later of the cheese mixture.
8. Apply the second layer of the cheese mixture. Then another layer of the lady fingers.
9. Do the final layers and the cheese mixture should be on top.
10. Sprinkle the cocoa powder.
11. Put a strawberry to decorate.
